Ingredients:
- 1 Eggs
- Illovo Sugar (2 teaspoons)
- Cooking oil
- All-purpose flour (2 full tablespoons)
- Baking powder
- Shredded lemon peel
- Lemon Juice
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with paper liners.
- Prepare a clean bowl and add eggs and sugar, whisk it until it’s mixed well
- Add cooking oil in the mixture, mix it well too
- In the mixture add flour and start mixing until it’s smooth then and baking powder and mix very well
- Grater lemon peels and prepare the lemon juice in separate containers
- Combine the batter with the lemon juice and the shredded lemon peel, beat it until it’s thoroughly mixed
- Fill the prepared cupcake liners with batter, 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes. Let the cupcakes cool in the pans before removing them to finish cooling on a rack, about 10 minutes.
