LEMON CAKES

1 Eggs, Illovo Sugar (2 teaspoons), Cooking oil

Ingredients:

  • 1 Eggs
  • Illovo Sugar (2 teaspoons)
  • Cooking oil 
  • All-purpose flour (2 full tablespoons)
  • Baking powder
  • Shredded lemon peel
  • Lemon Juice

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with paper liners.
  2. Prepare a clean bowl and add eggs and sugar, whisk it until it’s mixed well
  3. Add cooking oil in the mixture, mix it well too
  4. In the mixture add flour and start mixing until it’s smooth then and baking powder and mix very well
  5. Grater lemon peels and prepare the lemon juice in separate containers
  6. Combine the batter with the lemon juice and the shredded lemon peel, beat it until it’s thoroughly mixed
  7. Fill the prepared cupcake liners with batter, 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes. Let the cupcakes cool in the pans before removing them to finish cooling on a rack, about 10 minutes.
