Ingredients:
- 3/4 cup sweet potato, mashed
- 1 cup all-purpose flour
- 2 tsp Illovo Brown Sugar
- ¼ tsp salt
Method:
- Add the mashed sweet potato, Illovo Brown Sugar, salt, and flour to a mixing bowl and use your hands to combine until a dough forms.
- Separate the dough into 5 equal parts. Dust your working surface with flour and roll each tortilla with a rolling pin. Ensure not to make them too thin.
- Place each tortilla in a hot pan over medium-high heat and cook for 1 minute on each side.
- Stack each cooked tortilla on a plate and keep them covered with a clean kitchen towel while the rest cook.
Serve with your favorite stew or wrap over fillings!
