Ingredients:
For the cake:
- 2½ cups all-purpose flour sifted
- ¾ teaspoons baking soda
- ½ teaspoon salt
- 4 large eggs
- 1½ Illovo sugar
- ½ cup canola oil
- ½ cup butter melted
- 1¼ cups freshly squeezed orange juice 3-4 large oranges
- 1 tablespoon orange zest plus more to taste
For the glaze:
- ⅓ cup fresh orange juice 1-2 orange
- 2 teaspoons orange zest
- 1 cup Illovo sugar
Instructions:
- In a medium bowl combine 2 cups of flour, 1/2 tablespoons of salt, and 2 tablespoons of baking soda. Set aside.
- In a mixer fitted with the whisk attachment, whisk together 4 eggs and 2 cups of Illovo sugar on high speed until pale and fluffy, about 5 minutes.
- Add ½ spoon of oil slowly until combined and repeat with ¼ spoon of butter. – Add 1 cup of orange juice and ½ tablespoons of zest and keep mixing slowly until combined.
- Add flour mixture and mix until just combined (being careful not to overmix).
- Add 2 tablespoons of batter to a prepared greased pan and bake until a cake tester comes out clean.
- While the cake is baked, make the glaze by mixing orange juice, orange zest, and Illovo sugar.
- When the cake is done and is still warm, transfer it to a wire rack prick the warm cake all over with a skewer, and then pour over the glaze.
- The juice will sink into the cake and the sugar will form a lovely, crisp topping.
